CHRISTMAS GIFT: MAPLE, FLAX & HEMP ROASTED PECANS

I think one of the best ideas of Christmas presents are things made by yourself. And if it is food than it is even better... And if it something healthy - that is the best!





MAPLE, FLAX & HEMP ROASTED PECANS
/ Recipe adapted from here /


INGREDIENTS:
  • 2 cups pecans
  • 1/2 egg white
  • 2 TBS ground flax seeds
  • 1 TBS ground hemp seeds
  • pinch of pink salt
  • 1 TBS cinnamon
  • 6 crushed cloves
  • 1/4 cup maple syrup

METHOD:

Preheat the oven to 120 C and line baking tray with parchment paper.

Mix all spices, salt and ground seeds in small bowl.

Whisk the egg white until slightly frothy in large bowl. Add nuts and stir together. Then transfer onto the baking tray and pour maple syrup all over, sprinkle with mixture of spices. Using hands mix well and spread in one layer.

Bake for 15 minutes. Take out from the oven and stir around. Increase the temperature to 180 C and bake for another 10 minutes.

Take out from the oven and leave on the side to cool. Store in glass jar.

SKŁADNIKI:
  • 2 szklanki orzechów pekan
  • 1/2 białka jajka
  • 2 łyżki zmielonych nasion lnu
  • szczypta różowej soli
  • 1 łyżka mielonego cynamonu
  • 6 rozgniecionych główek goździków
  • 1/4 szklanki syropu klonowego


WYKONANIE:

Rozgrzać piekarnik do 120 C i wyłożyć blachę pergaminem.

W małej misce wymieszać wszystkie przyprawy, sól i zmielone nasiona.

Ubić lekko białko w dużej misce. Dodać orzechy i dobrze wymieszać. Następnie przenieść na blachę i polać syropem klonowym oraz posypać mieszanką przypraw. Dobrze wmieszać za pomocą dłoni i rozprowadzić na całej powierzchni blachy.

Piec przez 15 minut. Wyjąć z pieca i przemieszać. Zwiększyć temperaturę do 180 C i piec przez kolejne 10 minut.

Wyjąć z piekarnika i pozostawić do wystygnięcia. Przechowywać w szklanym słoiku.

MILLET PUDDING with BERRIES & TURMERIC

Not long time ago, I found one of the best food blogs ever. It is called Gotuj zdrowo! The fact I like the most is that the owner of that blog, Marek, comes from the same city as me ;)

The blog looks amazing. Beautiful photos and lots of information about ingredients used in prepared dishes.
Marek, the same as me, stands for conscious nutrition and eating healthily as a way of prevention. He is aware that food heals and nourishes us.

MILLET PUDDING with BERRIES & TURMERIC

INGREDIENTS:
  • 1 cup boiled millet
  • 3-4 dates
  • 1/2 cup almond milk (or any nut milk or mineral water)
  • 2 TBS ground almonds
  • 1 tsp cinnamon 
  • handful of fresh blueberries & raspberries
  • 1/2 tsp turmeric



METHOD:

Blend millet, dates, almond milk, almonds and cinnamon. Transfer to a glass or dessert dish, sprinkle with turmeric and top with fresh berries. Mix and enjoy it!

SKŁADNIKI:
  • 1 szklanka ugotowanej kaszy jaglanej
  • 3-4 daktyle bez pestek
  • 1/2 szklanki mleka roślinnego (jakiegokolwiek)
  • 2 łyżki mielonych migdałów
  • 1 łyżeczka cynamonu
  • garść owoców jagodowych
  • 1/2 łyżeczki kurkumy

WYKONANIE:

Kaszę zmiksować z daktylami, mlekiem, migdałami i cynamonem. Przełożyć do szklanki albo naczynia deserowego, posypać kurkumą i owocami. Wymieszać i rozkoszować się!

RICOTTA CHEESECAKE with ALMONDS

...Easter... I do not feel that lovely atmosphere as I am spending this time away from home this year. There is no delicious traditional food and... no snow, can you believe?! (everyone wanted white Xmass - it did not happen; so there is lots of white powder at Easter ha ha ha). 

I made only amazing cheesecake to celebrate this special time and nice egg dish for breakfast (in the next post).




RICOTTA CHEESECAKE with ALMONDS


INGREDIENTS:
  • 180 g crashed amaretti biscuits, finely crashed
  • 50 g coconut oil
  • 1 TBS real vanilla extract
  • 500 g ricotta
  • 250 g mascarpone
  • 80 g coconut palm sugar
  • 100 g ground almonds
  • 2 TBS potato flour
  • 2 eggs
  • lemon zest (how much you like)
  • almond flakes


METHOD:

Preheat oven to 170 C. Line a round baking tray (20-24 cm) with parchment paper.


Melt coconut oil and mix with  crashed biscuits. Spread mixture evenly on the baking tin and place into the fridge for about 15 minutes.



In the meantime, place the rest of ingredients in a large bowl and mix well. You can use food processor to do that. 


Then pour cheese mixture on the prepared earlier base, sprinkle with almond flakes and bake for 45-55 minutes or until lightly golden brown on the top. When ready, turn off the oven and leave cheesecake inside to cool slowly down leaving the oven door ajar.

Then place the cheesecake in the fridge for minimum 2 hours or overnight.

* Next time I will not use any sugar when using amaretti biscuits (they are very sweet).
** I used square baking tray when making that cheesecake.

SUPER NUT BITES

I had some ground almonds left after making almond milk so decision has been made. Today it is time for a treat. It is so easy to make and it tastes amazing. I do not have to even mention how healthy it is. The best thing about these super-mini-nut-balls is that there is no need to use the same ingredients every time you make them. There are many recipes, but you can use your imagination and ingredients you like the most. Dates and nut butter make the mixture sticky, so that is the base of the recipe. 

And that is how I made mine :)




SUPER NUT BITES / Makes about 14


INGREDIENTS:

  • 4 TBS ground almonds
  • 2 TBS raw almond butter
  • 16 − 20 finely chopped dates (you can use food processor)
  • 16 finely chopped pecans (again you can use food processor)
  • 1 tsp raw cacao powder
  • cinnamon (I love cinnamon so I use a lot)
  • pinch of sea salt

METHOD:

Place all ingredients in a bowl and mix well using your hand. The mixture should be sticky so then you tear some of it and shape small balls. Try to be gentle and do not press too hard when making shape. They will become more solid after placing them in the fridge for minimum one hour. 

* I sprinkled mine with more cinnamon.

RAW ALMOND MILK

One of my favourite bloggers is Sarah Britton - her blog is called My New Roots. Sarah is amazing person, great cook and holistic nutritionist. Is it not too much? Definitely not! She is one of people who should be your inspiration.

I was very curious what would be the taste of non dairy homemade milk. I had been buying soy, almond or hemp milk for years but I was sure that homemade one had to be different. And at the same time much healthier. 

First I made plain almond milk. It was delicious, a little frothy with delicate flavour. The second time, I added some maple syrup for more taste. You can also substitute maple syrup with dates, agave nectar or vanilla extract. So many choices!

RAW ALMOND MILK

INGREDIENTS:
  • 1 cup almonds (or any other nuts)
  • 4 cups filtered water (I use 3 cups because I prefer more intensive flavour)
  • pinch of sea salt (optional)
  • 2 TBS maple syrup


METHOD:
  1. Soak almonds for 8 hours or overnight. 
  2. Drain, rinse and place in high speed blender. 
  3. Add water and male syrup.
  4. Press the button to start and blend until smooth. 
  5. Take a big bowl or jug, line with nut milk bag or cheesecloth.
  6. Pour the mixture from the blender and squeeze.
  7. Pour milk into a glass jar or bottle.

* You can keep it in the fridge for up to 4 days. 

** Ground almonds (that what is left in nut milk bag) can be used for baking or you can add them when making pancakes, smoothies or use as garnish.

MINI APPLE CRUMBLE

Today I wanted something light, warm with my favourite spices. I chose delicious apple crumble. Of course, I am not able to survive without dessert!





MINI APPLE CRUMBLE / Makes 2-3

INGREDIENTS:
  • 2 medium apples
  • 1/2 TBS cornstarch
  • 4 crushed cloves
  • 1/2 cup oats
  • 2 TBS ground almonds
  • 2 TBS palm sugar
  • 1/4 tsp cinnamon
  • pinch of sea salt
  • 1/4 tsp baking powder
  • 1 TBS unsalted butter
  • 2 TBS mild olive oil

METHOD:

Preheat oven to 175 C. 



Peel and core apples, cut them in small chunks. 



Place them in a small bowl, add cornstarch and sprinkle crushed cloves and mix well. Then transfer to two or three ramekins. 




Place all dry ingredients in a medium bowl and mix. Melt butter and the stir in olive oil. 



Pour to the dry mixture and mix well until crumbly. 



Divide crumble mixture over apples. Sprinkle with a little water. 

Bake for 30-40 minutes or until crumbs are golden brown and you can see apples bubbling around them. Leave them to cool for few minutes and serve warm with oat cream or natural yoghurt.

Dzisiaj miałam ochotę na coś lekkiego i ciepłego z moimi ulubionymi przyprawami. Wybrałam jabłka pod kruszonką. Nie umiem przeżyć bez deserów!

MINI JABŁKA POD OWSIANĄ KRUSZONKĄ / 2 porcje

SKŁADNIKI:
  • 2 średniej wielkości jabłka
  • 1/2 łyżki skrobi kukurydzianej
  • 4 zmiażdżone goździki
  • pół szklanki płatków owsianych
  • 2 łyżki mielonych migdałów
  • 2 łyżki cukru palmowego (albo innego "zdrowego słodzika")
  • 1/4 łyżeczki cynamonu
  • szczypta soli morskiej
  • 1/4 łyżeczki proszku do pieczenia
  • 1 łyżka masła bez soli
  • 2 łyżki oliwy z oliwek

WYKONANIE:

Piekarnik nagrzać do 175 st. C. Obrać jabłka i pokroić na małe kawałki. W małej misce wymieszać je z mąką kukurydzianą i goździkami, a następnie przełożyć do przygotowanych 2 albo 3 kokilek. Suche składniki wymieszać w misce. Masło rozpuścić, dodać oliwę i wymieszać. Następnie wlać do suchych składników mieszając do uzyskania konsystencji kruszonki. Podzielić między kokilki i spryskać lekko wodą. Piec przez 30-40 minut albo aż kruszonka będzie złoto-brązowa i sok z jabłek będzie lekko bulgotał. Pozostawić chwilę do ostudzenia. Serwować ciepłe z kremem owsianym lub jogurtem naturalnym.

VANILLA ALMOND SPELT MUFFINS with BLUEBERRIES

Today is a special day so that is the reason to make my favourite muffins.



VANILLA ALMOND SPELT MUFFINS with BLUEBERRIES /Makes about 20 mini muffins

INGREDIENTS:

  • 1 & 1/4 cups wholegrain spelt flour
  • 1/2 cup flaked almonds (or ground)
  • 1 tsp baking powder
  • 1/2 cup palm sugar (or brown)
  • pinch of salt
  • 130 g clarified butter
  • 1/2 cup almond milk
  • 2 eggs
  • vanilla extract (as much as you like)
  • 1 cup blueberries




METHOD:

Preheat oven to 180 - 190 C. Melt butter and leave to cool. Mix all dry ingredients in a big bowl. In another bowl whisk eggs, almond milk, vanilla extract and add butter when ready. Then pour wet ingredients to dry and mix well. At the end add blueberries and mix. Use spoon to pour mixture in muffin moulds. Bake for about 20 minutes.

WANILIOWO MIGDAŁOWE MUFFINY Z JAGODAMI /około 20 mini muffin

SKŁADNIKI:
  • 1 i 1/4 szklanki mąki orkiszowej
  • 1/2 szklanki migdałów w płatkach (albo mielonych)
  • 1 łyżeczka proszku do pieczenia
  • 1/2 szklanki cukru palmowego (lub brązowego)
  • szczypta soli
  • 130 g masła
  • 1/2 szklanki mleka migdałowego
  • 2 jajka
  • ekstrakt z wanilii (ile lubisz)
  • 1 szklanka jagód

WYKONANIE:

Piekarnik nagrzać do 180-190 st. C. Masło rozpuścić w rondelku i zostawić do ostudzenia. W dużej misce wymieszać wszystkie suche składniki. W drugiej, roztrzepać jajka, dodać mleko, ekstrakt z wanilii a na końcu ostudzone masło. Następnie wlać mokre składniki do suchych i dobrze wymieszać. Dodać jagody i wymieszać. Przekładać do foremek za pomocą łyżki. Piec około 20 minut.

CHEESECAKE with KAYMAK


Cheesecake is one of my 'must haves' for Christmas. This kind of cheesecake with kaymak (Liska from White Plate blog had so fantastic idea) is simply perfect!  I have used less sugar than there is in a recipe and I loved it as I prefer not very sweet cakes!
It was eaten so quickly. Even the last piece which I hid at the back of the fridge for my grandma disappeared. 
Few people (including me) cannot stop thinking about it... I will have to make a new one soon.





CHEESECAKE with KAYMAK

BASE
INGREDIENTS:
  • 50 g crashed salted almonds
  • 80 g crashed plain biscuits (for example petit beurre)
  • 30 g melted butter



METHOD:

Preheat the oven to 190C. Line a round baking tray (20-24 cm) with baking paper. Melt butter in a small saucepan and leave it to cool for a while. Then mix all ingredients in a food processor. Then spread mixture evenly on the baking tin and bake for about 12 minutes. When ready, take out from the oven and leave on the side.

* In the meantime, roast almond flakes in the oven heated to 190C for about 8 minutes. 


FILLING
INGREDIENTS:
  • 400 g kaymak
  • 50 g butter
  • 70 g brown sugar
  • vanilla sugar
  • 3 eggs
  • 600 g curd cheese
  • 1 TBS spelt flour (any flour will do)



METHOD:

Beat butter with sugar until fluffy. Then add 230 g kaymak (the rest will be used for a topping) and mix together. Transfer this mixture to a food processor, add eggs, cheese, flour and mix well.

Spread that mixture evenly on ready base and bake in 180C for about 45-50 minutes (next time I will bake it in 140-150C for minimum one hour). After 30 minutes check if the top does not get too brown - if so, you need to cover it with aluminium foil. When ready, turn off the oven and leave cheesecake inside to cool, leaving the door ajar. 

Then take it out from the oven and make icing.


ICING
INGREDIENTS:
  • 170 g kaymak
  • 3 TBS milk
  • 2 TBS butter
METHOD:

Simmer kaymak and milk in a saucepan on medium heat until it becomes more liquidy. If some lumps appear, use blender to make this mixture smooth. Remove from heat, add butter and mix together until well combined.

Pour mixture on the top of cheesecake and sprinkle with roasted almond flakes.

Put ready cheesecake in the fridge for at least one hour.

Sernik to coś co muszę mieć na Święta Bożego Narodzenia. A w tej wersji (pomysł Liski z White Plate blog) z pysznym kajmakiem jest doskonały. Użyłam mniej cukru niż jest w przepisie i po prostu wyszedł rewelacyjnie! Skończył się bardzo szybko i nawet kawałek, który zachowałam dla babci, zniknął.
Poza tym kilka osób (w tym ja) nie może przestać o nim myśleć... Będę musiała zrobić  go znowu.





SERNIK KAJMAKOWY
// Oryginlany przepis znajdziecie tutaj //


SPÓD

SKŁADNIKI:
  • 50 g solonych migdałów
  • 80 g herbatników (np. petit beurre)
  • 30 g roztopionego masła


WYKONANIE:


Nagrzać piekarnik do temperatury 190 stopni C. Blachę o średnicy 20-24 cm wyłożyć papierem do pieczenia. Masło roztopić w małym rondelku i pozostawić do wystygnięcia przez kilka minut. Następnie wszystkie składniki wymieszać w malakserze. Wyłożyć taką masą spód blachy, wyrównać i piec około 12 minut. Wyjąć z piekarnika i odstawić na bok.

* W międzyczasie uprażyć płatki migdałów w temperaturze 190 st. C przez około 8 minut.


MASA SEROWA

SKŁADNIKI:
  • 400 g masy kajmakowej (kupiłam gotową w sklepie z produktami benedyktyńskimi)
  • 50 g masła
  • 70 g cukru trzcinowego
  • cukier waniliowy
  • 3 jajka
  • 600 g białego sera (użyłam sera w kostkach od Benedyktynów; można użyć również gotowego sera na sernik)
  • 1 łyżka mąki orkiszowej (można użyć inną)


WYKONANIE:

Masło utrzeć z cukrem. Następnie dodać 230 g masy kajmakowej (resztę wykorzystać do polewy) i utrzeć aż masa będzie gładka. Przełożyć do malaksera, dodać jajka, ser i mąkę, wymieszać.

Masę przełożyć na podpieczony spód, równo rozprowadzić i piec w temperaturze 180 st. C przez 45-50 minut (następnym razem chcę upiec taki sernik w 140-150 st. C przez min. godzinę). Po 30 minutach sprawdzić czy wierzch za bardzo się nie przypieka - jeśli tak, to trzeba przykryć folia aluminiową. Gotowy sernik pozostawić w wyłączonym piekarniku z otwartymi drzwiczkami do wystygnięcia.

Ostudzony sernik wyjąć i przygotować polewę.


POLEWA KAJMAKOWA

SKŁADNIKI:
  • 170 g masy kajmakowej
  • 3 łyżki mleka
  • 2 łyżki masła

WYKONANIE:

Kajmak z mlekiem gotować na małym ogniu aż masa stanie się płynna. Jeśli powstaną grudki, należy ją zmiskować. Zdjąć z ognia, dodać masło i wymieszać do połączenia się składników.

Następnie polać polewą wierzch całkowicie ostudzonego sernika i posypać uprażonymi wcześniej płatkami migdałów.

Gotowy sernik wstawić do lodówki na minimum godzinę.
