CANTUCCINI & MASCRAPONE PUDDING

There is not much to say...

...that is dessert to die for...

CANTUCCINI & MASCRAPONE PUDDING

INGREDIENTS:
  • 1 egg yolk
  • 125 g mascarpone
  • 2 tsp coconut palm sugar
  • 6 cantuccini or biscotti biscuits
  • chocolate liqueur or amaretto or any other (I used that one)
  • cinnamon
  • cocoa nibs

METHOD:

Soak biscuits in your chosen liqueur for about 10 minutes or until they absorb liquid. Remember to flip them.

In the meantime, beat mascarpone with egg yolk and sugar very well using whisk until lightly fluffy.

Make layers in your dish by crumbling biscuit, sprinkling with cinnamon and covering with cream. Make as many as you want. Sprinkle with cacao nibs and place in the fridge for about half an hour.

...and then you can forget about the whole world!

RICOTTA CHEESECAKE with ALMONDS

...Easter... I do not feel that lovely atmosphere as I am spending this time away from home this year. There is no delicious traditional food and... no snow, can you believe?! (everyone wanted white Xmass - it did not happen; so there is lots of white powder at Easter ha ha ha).

I made only amazing cheesecake to celebrate this special time and nice egg dish for breakfast (in the next post).

RICOTTA CHEESECAKE with ALMONDS

INGREDIENTS:
  • 180 g crashed amaretti biscuits, finely crashed
  • 50 g coconut oil
  • 1 TBS real vanilla extract
  • 500 g ricotta
  • 250 g mascarpone
  • 80 g coconut palm sugar
  • 100 g ground almonds
  • 2 TBS potato flour
  • 2 eggs
  • lemon zest (how much you like)
  • almond flakes

METHOD:

Preheat oven to 170 C. Line a round baking tray (20-24 cm) with parchment paper.

Melt coconut oil and mix with  crashed biscuits. Spread mixture evenly on the baking tin and place into the fridge for about 15 minutes.

In the meantime, place the rest of ingredients in a large bowl and mix well. You can use food processor to do that.

Then pour cheese mixture on the prepared earlier base, sprinkle with almond flakes and bake for 45-55 minutes or until lightly golden brown on the top. When ready, turn off the oven and leave cheesecake inside to cool slowly down leaving the oven door ajar.

Then place the cheesecake in the fridge for minimum 2 hours or overnight.

Enjoy!

* Next time I will not use any sugar when using amaretti biscuits (they are very sweet).
** I used square baking tray when making that cheesecake.

CARROT CAKE with MASCARPONE

I have tried many carrot cakes but not many of them I remember. Once I lived near organic shop where every week one of the best carrot cakes was baked. It was served with goats cheese cream and no raisins - luckily for me! Each piece was soft and melting in my mouth. Every time it was disappearing so quickly even though I was trying to make a pleasure last longer!

So here it is, first time on that blog but not the first time made by me...

CARROT CAKE
// Recipe comes from A tale of Two //
INGREDIENTS:

  • 125 g white spelt flour
  • 125 g wholegrain spelt flour
  • 1/2 tsp of baking powder
  • 1 tsp cinnamon
  • pinch of ground cloves
  • pinch of salt
  • 200 ml light olive oil
  • 180 g mild Muscovado sugar
  • 3 eggs, separated
  • 150 g grated carrots
  • juice of half lemon
  • 150 g chopped walnuts

METHOD:

Preheat the oven to 200C. Line a round cake tin (22 cm) with baking parchment.

Mix together the flour, baking powder, cinnamon, cloves and salt. In a separate bowl beat the oil and sugar with a mixer until well creamed. Then add egg yolks, one at a time. Grate the carrots into the mixture, add lemon juice, roughly chopped walnuts and mix everything together. Fold the flour with spices into the mixture on low speed. At the end beat the egg whites until light and stiff, and fold them carefully into the mixture with a large spoon.

Pour the mixture into the cake tin and bake for 40-45 minutes. Test with a skewer if it is ready. The cake should be moist but not sticky. Leave in the oven with repealed doors to cool for 10 minutes. Then transfer to a wire cooling rack and leave to cool down completely.

MASCARPONE CREAM

INGREDIENTS:

  • 300 g Mascarpone
  • 100 g sifted icing sugar
  • 5 TBS butter at room temperature
  • 1 tsp vanilla extract or paste

METHOD:

Put all the ingredients in a bowl and cream with an electric mixer until smooth.

Cut the cake cooled down cut it along in half. Spread half of prepared earlier cream on the bottom cake half and the rest spread over the top part. Garnish with walnuts and lightly sprinkle with cinnamon. And it is ready to serve!

Próbowałam wielu ciast marchewkowych, ale niewiele zostało w mojej pamięci. Raz mieszkałam niedaleko sklepu z organicznymi produktami.

CIASTO MARCHEWKOWE

SKŁADNIKI:

  • 125 g białej mąki orkiszowej
  • 125 g ciemnej mąki orkiszowej
  • 1/2 łyżeczki proszku do pieczenia
  • 1 łyżeczka cynamonu
  • szczypta rozgniecionych goździków
  • szczypta soli
  • 200 ml jasnej oliwy z oliwek
  • 180 g jasnego cukru trzcinowego (np. Muscovado)
  • 3 jajka, żółtka i białka osobno
  • 150 g startej marchewki
  • sok z połowy cytryny
  • 150 g posiekanych orzechów włoskich

WYKONANIE:

Nagrzać piekarnik do temperatury 180 stopni C. Blachę o średnicy 22 cm dokładnie posmarować masłem i posypać mąką albo wyłożyć papierem do pieczenia.

W misce wymieszać mąkę, proszek do pieczenia, sól, cynamon, rozgniecione goździki i imbir. Olej utrzeć z cukrem za pomocą miksera. W między czasie oddzielić żółtka od białek (te zachować na później). Do ubitego oleju z cukrem dodawać po jednym żółtku. Potem dodać startą marchewkę, posiekane grubo orzechy i sok z cytryny. Następnie powoli mieszając dodawać suche składniki do mokrych i dobrze wymieszać. Na samym końcu ubić na sztywno białka i delikatnie wymieszać z resztą ciasta.

Przełożyć ciasto do tortownicy i piec około 40-45 minut. Sprawdzić patyczkiem czy ciasto jest upieczone - powinno być wilgotne ale nie lepkie. Gotowe pozostawić w otwartym piekarniku przez 10 minut, a następnie wyjąć i pozostawić do wystygnięcia.

KREM Z MASCARPONE

SKŁADNIKI:

  • 300 g serka Mascarpone
  • 6 łyżek masła w temperaturze pokojowej
  • 1 szklanka cukru pudru
  • 1 łyżeczka ekstraktu lub pasty z wanilii

WYKONANIE:

Wszystkie składniki umieścić w misce i utrzeć za pomocą miksera na gładką masę.

Wystudzone ciasto przekroić wzdłuż. Połową kremu przełożyć ciasto, a resztę rozsmarować na górze. Ozdobić orzechami włoskimi i delikatnie oprószyć cynamonem. Gotowe!
