MINESTRONE SOUP with KALE

I have to say that this soup is simply amazing. I have never tried so delicious minestrone one ;)




MINESTRONE SOUP with KALE

INGREDIENTS:
  • 1 large white onion, chopped in small pieces
  • 3 medium carrots, thinly sliced
  • 2 celery stalks, thinly sliced
  • 1 cube of vegetable stock (I use that one)
  • 3/4 − 1 cup red lentil, rinsed
  • 1/2 large courgette, thinly sliced
  • 1 leek, thinly sliced
  • 3 cloves of garlic, thinly sliced
  • tin of chopped tomatoes
  • large handful of kale (stems removed), washed & teared into small pieces
  • pink salt
  • 1 tsp turmeric
  • 1 tsp sweet paprika
  • red wine vinegar, optional



METHOD:

Place about 1 & half litre of water in large pan on medium heat. Add onion, celery, carrots, stock and cook for about 10 minutes.

Then add garlic, leek, courgette and red lentil. Cook for further 5 minutes.

Add tomatoes (and a little water if too thick). Bring to the boil and cook for about 10 minutes or until all ingredients are tender.

At the end, add kale and cover for few more minutes cooking on small heat. Add turmeric, sweet paprika and season with salt to taste.

You can add also just a little of red wine vinegar.

ROZGRZEWAJĄCA ZUPA MINESTRONE


SKŁADNIKI:
  • 1 duża biała cebula (drobno posiekana)
  • 3 średnie marchewki (pokrojone w cienkie plasterki)
  • 2 łodygi selera (pokrojone w cienkie plasterki)
  • 1 kostka bulionu warzywnego (BIO)
  • 1 szklanka czerwonej soczewicy (przepłukanej)
  • 1/2 dużej cukini (pokrojona w cienkie plasterki)
  • 1 por (pokrojony w cienkie plasterki)
  • 3 ząbki czosnku (pokrojone w cienkie plasterki)
  • puszka pokrojonych pomidorów
  • duża garść jarmużu (łodygi usunięte, umyty i porwany na małe kawałki)
  • różowa sól
  • 1 łyżeczka kurkumy
  • 1 łyżeczka słodkiej papryki
  • czerwony ocet winny (opcjonalnie)



WYKONANIE:

W dużym rondlu postawić około 1 i pół litra wody na średnim ogniu. Dodać cebulę, seler, marchew, kostkę bulionu i gotować przez około 10 minut.

Następnie dodać czosnek, pora, cukinię i czerwoną soczewicę. Gotować przez kolejne 5 minut.

Dodać pomidory (i trochę wody jeśli zupa jest zbyt gęsta). Doprowadzić do wrzenia i gotować przez około 10 minut na wolnym ogniu aż wszystkie składniki będą miękkie.

Na koniec dodać jarmuż i gotować pod przykryciem na małym ogniu przez kilka następnych minut. Następnie dodać kurkumę, słodką paprykę i doprawić solą do smaku.

Można dodać też trochę czerwonego octu winnego.

SAVOURY SPELT & CORN MUFFINS


Few days ago, my mum told me that she had made savoury buckwheat and maize flour muffins. I thought I would have to make something similar too as that is a great snack.
You can prepare bunch of these small ones, refrigerate and take, for example, to work.




SAVOURY SPELT & CORN MUFFINS / Makes 6-7 


BATTER INGREDIENTS:
  • 1 cup maize flour
  • 1/2 cup spelt flour
  • 1 tsp baking powder
  • 1 cup any nut milk
  • 1/4 cup extra virgin olive oil or coconut oil
  • 1 tsp pink salt
  • 1 TBS  thyme

FILLING INGREDIENTS:
  • 1 lrg portobello
  • handful of asparagus
  • 1 leek (only white part)
  • 3 sticks of celery
  • clarified butter




METHOD:

Cut vegetables in small pieces. Melt butter on the frying pan, add vegetables and sauté until tender. Remove from the gas and leave to cool on the side.

Preheat oven to 200 C. Prepare muffin tins.     

In large bowl mix all dry ingredients. Then add vegetables and mix well. Divide between muffin cases and bake for about 20-30 minutes.

JUICE V

When I started juicing I was not able to drink juices made mostly from not sweet vegetables. I had to use some apples, carrots or beetroots to get my favourite sweet taste.
The time has passed and now it is the opposite situation. If my juice is not very green, I feel like something is missing.

INGREDIENTS:

  • 1 lemon
  • handful of lamb lettuce
  • handful of parsley
  • small piece of ginger
  • 5 celery sticks
  • 1 tsp of powdered spirulina


METHOD:

Juice all ingredients, sprinkle with spirulina and enjoy!

JUICE II



JUICE II

INGREDIENTS:

  • 2 celery sticks
  • half broccoli
  • 1 apple
  • half lemon

METHOD:

Wash fruits and vegetables. Peel the lemon (when using citrus fruits with skin, the taste will be slightly bitter). And make a juice :) Sit down and enjoy drinking by small sips (that is the right way).

JUICE I

I bought my juicer after watching movie of Food Matters called Hungry for Change (there is still 9 days left to register and watch this fantastic documentary for free!).

Additionally, I have taken part in few workshops about juicing and raw diet, and I would never go back! I think you need to try and feel the differences how your life change.

INGREDIENTS:

  • 3 medium carrots
  • 1 apple
  • half broccoli stem
  • 3-4 celery sticks




METHOD:

Wash fruit and vegetables. Just process them through juicer and enjoy! So simple :)
