WHOLEGRAIN SPELT RICOTTA SCONES with PERSIMMONS

That post is one week old but I still think it is worth to post it anyway ;)

On my way to do shopping I went past the city centre of Manchester and the stands of Xmas market were nearly ready. There were some Christmas ornaments on the lamps, trees etc. It was the first time when I could 'smell' coming Christmas this year and I thought, 'too early - it is still the beginning of November'.

When I got home I decided to stop that craziness for a second by making colourful and sunny dish.

The idea of using persimmons by Sarah is simply great! I think these fruits go so well with sweetness of wholegrain spelt flour in my recipe.

WHOLEGRAIN SPELT RICOTTA SCONES with PERSIMMONS /Makes 6 or 9
/Recipe adapted from here/

INGREDIENTS:
  • 1/2 cup white spelt flour
  • 1/2 cup wholegrain flour
  • 1 TBS baking powder
  • 1/4 cup coconut sugar
  • 1/2 tsp sea salt
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamon
  • 6 TBS unsalted butter
  • 1 cup finely chopped persimmons
  • 1 cup ricotta

METHOD:

Preheat the oven to 220C. Line baking tray with parchment paper.

Mix all dry ingredients together in a large bowl. Then add butter and mix until crumble texture (use pastry  blender or knife or your fingers - but be quick not to warm the butter) . Toss in the persimmons and mix gently, followed by adding ricotta stirring into very well.

Transfer the dough onto floured surface and pat it into a 17cm square, 2.5cm high. Divide the dough into 6 (or 9) scones by sharp knife. Transfer onto the baking sheet and bake for about 18 minutes or until golden at the edges.

Cool them for a while and then enjoy!

RICOTTA CHEESECAKE

I think you know already that I love cheesecake.

This time I made very healthy one. Firstly, I wanted to make shortbread base for my cheesecake. Unfortunately, I had a small accident in my kitchen and all prepared dough was dropped into the sink. So I decided to make it without the base.

RICOTTA CHEESECAKE

INGREDIENTS:
  • 750g ricotta
  • 3/4 cup of xylitol
  • 1 cane sugar with real vanilla
  • 3 eggs
  • 3 TBS potato flour
  • 3 TBS spelt flour
  • lemon zest
  • 200g organic natural yoghurt

METHOD:

Preheat the oven to 160C. Line round baking tray (about 22cm) with parchment paper.

Mix ricotta with xylitol and vanilla sugar in big bowl using electric mixer. Then add eggs, lemon zest and both flours. At the end add yoghurt.

Bake for about 50 minutes to 1 hour using 3D hot air function in your oven.

When ready, turn off the oven and leave cheesecake inside to cool, leaving the door ajar. Then place it in the fridge for minimum 1 hour before serving.

RICOTTA CHEESECAKE with ALMONDS

...Easter... I do not feel that lovely atmosphere as I am spending this time away from home this year. There is no delicious traditional food and... no snow, can you believe?! (everyone wanted white Xmass - it did not happen; so there is lots of white powder at Easter ha ha ha).

I made only amazing cheesecake to celebrate this special time and nice egg dish for breakfast (in the next post).

RICOTTA CHEESECAKE with ALMONDS

INGREDIENTS:
  • 180 g crashed amaretti biscuits, finely crashed
  • 50 g coconut oil
  • 1 TBS real vanilla extract
  • 500 g ricotta
  • 250 g mascarpone
  • 80 g coconut palm sugar
  • 100 g ground almonds
  • 2 TBS potato flour
  • 2 eggs
  • lemon zest (how much you like)
  • almond flakes

METHOD:

Preheat oven to 170 C. Line a round baking tray (20-24 cm) with parchment paper.

Melt coconut oil and mix with  crashed biscuits. Spread mixture evenly on the baking tin and place into the fridge for about 15 minutes.

In the meantime, place the rest of ingredients in a large bowl and mix well. You can use food processor to do that.

Then pour cheese mixture on the prepared earlier base, sprinkle with almond flakes and bake for 45-55 minutes or until lightly golden brown on the top. When ready, turn off the oven and leave cheesecake inside to cool slowly down leaving the oven door ajar.

Then place the cheesecake in the fridge for minimum 2 hours or overnight.

Enjoy!

* Next time I will not use any sugar when using amaretti biscuits (they are very sweet).
** I used square baking tray when making that cheesecake.

WHOLEGRAIN SPELT RICOTTA SCONES

One of the easiest English teatime treats. For me, no raisins please!

WHOLEGRAIN SPELT RICOTTA SCONES / Makes 8 scones
// Recipe lightly adapted from SPROUTED KITCHEN //

INGREDIENTS:

  • 1 cup white spelt flour
  • 1 cup wholegrain spelt flour
  • 1 TBSP aluminium free baking powder
  • 1/4 cup natural cane sugar
  • 1/2 tsp sea salt
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamon
  • 1 tsp vanilla extract
  • 6 TBSP unsalted butter, chilled
  • 1 cup whole milk ricotta

METHOD:

Preheat the oven to 200C and line a baking sheet with baking paper.
Mix together the flour, baking powder, salt and the spices. Cut the butter into small pieces and rub it into the flour mixture with your fingers (just be quick to not warm the butter), or use a food processor (that makes it easy). At the end add the ricotta to the butter mixture and stir them in to a form a dough using a flexible spatula, or pulse a few times in the processor.
Transfer the dough to a floured surface and working quickly, use your hands to knead the dough gently into an even mass.

Then flour the top of dough, and pat into a 18 cm square, 2.5 cm high. With a large sharp knife divide the dough into eight scones. Transfer the scones to the prepared baking tray. Bake the scones for about 18-20 minutes until they are lightly golden at the edges. Cool them on a wire rack.

Enjoy with good jam or clotted cream, or both!

ORKISZOWE "BUŁECZKI" Z RICOTTĄ / 8 sztuk

Jeden z najprostszych do wykonania dodatków angielskiej 'afternoon tea' znalazł upodobanie wśród moich smakołyków. Jednak tylko w wersji bez rodzynek i najlepiej z ulubionej mąki orkiszowej.

SKŁADNIKI:

  • 1 szklanka białej mąki orkiszowej
  • 1 szklanka mąki orkiszowej
  • 1 łyżka stołowa proszku do pieczenia bez aluminium
  • 1/4 szklanki brązowego cukru
  • 1/2 łyżeczki soli morskiej
  • 1/4 łyżeczki cynamonu
  • 1/4 łyżeczki kardamonu
  • 1 łyżeczka waniliowego ekstraktu
  • 6 stołowych łyżek schłodzonego niesolonego masła
  • 1 szklanka (ok. 250g) sera ricotta

WYKONANIE:

Nagrzać piekarnik do temperatury 210-220 stopni C. Blachę wyłożyć papierem do pieczenia.

W misce wymieszać mąkę, proszek do pieczenia, sól i przyprawy.
