PAVLOVA with BERRIES

Summer desserts are light and yummy. Time for pavlova!

PAVLOVA with BERRIES

INGREDIENTS:
  • 2 egg whites
  • 100 g dark brown sugar
  • pinch of salt
  • 1/3 tsp cornstarch
  • 300 ml double cream
  • fresh berries

METHOD:

Preheat the oven to 175 C. Prepare baking tray with parchment paper.

Whip egg whites with pinch of salt until fluffy. Then gradually add sugar and beat until stiff. At the end add cornstarch and mix gently. Transfer the mixture onto the baking paper and spread in the round shape.

Place into the oven, on the lower part, turn down the heat to 120 C and bake for about 1 hour and 15 mins. The meringue should be crispy on the edges and soft in the middle. When ready, leave in the oven with door ajar.

In the meantime, whip cream and put to the fridge. Wash berries and drain well.

When the meringue is at room temperature, spread whipped cream on the top, top with berries and serve!

ELDERFLOWER PANNA COTTA

Panna cotta is one my favourite Italian desserts. However, traditionally it is made from milk, cream and sugar, I have decided to make a little change.

ELDERFLOWER PANNA COTTA / Makes 3-4 (it depends on the size of form)
// Recipe adapted from here //

INGREDIENTS:

  • 500 ml double cream
  • seeds form 1 vanilla pod or 4 tsp vanilla extract
  • 4 TBS agave nectar
  • powdered gelatine for 1/2 l of liquid
  • 4-5 TBS Elderflower liquor

METHOD:

Place cream, vanilla and agave nectar in a medium saucepan and simmer on high heat stirring occasionally. Bring it to boil and remove from gas immediately. In the meantime, melt gelatine in 2-3 tablespoons of hot water. When it is ready, pour it into cream and stir. Let i cool down a little and then add elderflower liquor. Divide mixture between ramekins or any small dishes you are using. Let is sit in the room temperature, then cover with cling film and put to the fridge. When set, it is ready to serve!

Panna cotta to jeden z moich ulubionych włoskich desrów. Oryginalny przepis mówi o miksturze mleka, śmietany i cukru. Ja jednak pozwolilam sobie wprowadzić małą zmianę.

PANNA COTTA Z LIKIEREM Z CZARNEGO BZU / 3-4 porcje (w zależności od wielkości naczyń)

SKŁADNIKI:
  • 500 ml słodkiej śmietanki
  • ziarenka z 1 laski wanilii lub 4 łyżeczki ekstraktu z prawdziwą wanilią
  • 4 łyżki nektaru z agawy
  • żelatyna  w proszku na 1/2 l płynu
  • 4-5 łyżek likieru z czarnego bzu

METODA:

Śmietankę, wanilię i agawę podgrzewać w rondlu na dużym ogniu mieszając co jakiś czas. Doprowadzić do wrzenia i natychmiast zdjąć z ognia. W międzyczasie dokładnie rozpuścić żelatynę w 2-3 łyżkach gorącej wody i wlać do śmietanki. Poczekać chwilę aż przestygnie i wtedy dodać likier z czarnego bzu. Rozlać do naczyniek i pozostawić w temperaturze pokojowej do wystygnięcia. Następnie przykryć folią spożywczą i wstawić do lodówki do całkowitego zastygnięcia.

CHESTNUT CREAM

I remember there was a time when I was really interested how chestnuts tasted. I tried these delicious small things for the first time when I went to Vienna before Christmas when I was at high school.
Last year I watched Rachel Khoo BBC series and I have decided to try her chestnut cream recipe. It is delicious! and it can be eaten with crepes, toasts, waffles, cakes etc.

Pamiętam jak bardzo byłam zainteresowana smakiem kasztanów. Raz przed świętami Bożego Narodzenia pojechałam do Wiednia i właśnie tam po raz pierwszy próbowałam tych pyszności.
W zeszłym roku oglądałam serię BBC z Rachel Khoo i postanowiłam spróbować jej przepisu na krem z kasztanów. Jest pyszny i można go serwować z naleśnikami, tostami, goframi, ciastami itp.

KASZTANOWY KREM
// obejrzyjcie tutaj //

SKŁADNIKI:

  • 200 g ugotowanych kasztanów
  • 250 ml śmietanki min. 30%
  • 2 stołowe łyżki cukru trzcinowego
  • 1 laska wanilii
  • 1 i pół stołowej łyżki koniaku (opcjonalnie)

WYKONANIE:

Kasztany, śmietankę i cukier włożyć do rondla. Wyskrobać ziarenka wanilii i wraz z laską włożyć do pozostałych składników. Gotować na małym ogniu przez około 10 minut. Następnie wyjąć laskę wanilii i zmiksować na gładką masę za pomocą blendera. Gotowe!
